A low carb, healthy, satisfying and tasty dish for a change: white turnips with peppers. You can use it as a side dish if you want (I sure did) but this dish is able to serve as a meal on its own, dramatically reducing the carbohydrates intake. You see, turnips are high in fiber, vitamin C and low on carbs. That means they are satisfying and will make you feel filled without making you fat. Besides being healthy for your body, this dish is also aromatic and delicious. You break the turnips with some heat and a very small amount of bacon and bake/roast them with peppers, spearmint and sage. The fragrance will be amazing.
If you're vegetarian this one's easy for you. Just skip the bacon and cook the rest of the recipe as is.
3 turnips
5 baby peppers
10g margarine
1 1/2 onion
3 garlic cloves
2 tablespoons olive oil
50g bacon
1/2 lemon zest
1/2 teaspoon of ginger puree
Sage and spearmint
200ml water
Salt
1. Grease a safe oven dish with the margarine. Reserve.
2. Peel the turnips and cut each into eight pieces. Reserve.
3. Chop 1/2 an onion and put it in a pan. Crush and add the garlic, salt and the bacon cut in little pieces. Add 1 tablespoon of olive oil and let it fry until the onion looks golden.
4. Add the turnips and 100ml of water and let it cook for 5 minutes.
5. Wash and cut the onion (unpeeled works better) into eight pieces. Put it on the oven dish. Cut three peppers in half and add them in the same recipient. Add the turnips and the bacon.
6. On top add the lemon zest, the ginger puree, a handful of sage and 5 leafs of spearmint.
7. Sprinkle with one teaspoon of olive oil and bake at 180 celsius for 20 mns.
