To make a real Açorda Alentejana, a traditional dish from southern Portugal you need lots of coriander and a bit of pennyroyal. The latter is not as easy to find in city markets and you'll find yourself needing to find a substitute. Our tip today is to use a mixture of spearmint and fresh thyme (95% to 5%) to substitute the pennyroyal.
You should end up with something like
90% coriander
9,9% spearmint with thyme (be sure to use little thyme. 5% or less)
0,1% salt and pepper
Use this mix as you would the traditional one and you'll have the mint scent back in your Açorda Alentejana.
